Saidah got an electric mini donut maker for Christmas! She suggested that we adapt our favorite banana bread recipes to test out the new gadget. Serve with warmed maple syrup for a fun breakfast treat. Pair with a scoop of vanilla ice cream and salted caramel sauce for dessert.
INGREDIENTS
3 overripe bananas
6 tbsp butter, melted
1 egg
1 tbsp vanilla paste or vanilla extract
2 tsp cinnamon
1/2 cup of brown sugar
1/2 tbsp baking powder
1 pinch salt
1 1/2 cups all-purpose flour
1/4 cup chopped walnuts
INSTRUCTIONS
Combine dry ingredients- flour, salt, cinnamon, and baking powder- in a bowl and mix well.
Mash bananas in a separate large mixing bowl. Add melted butter, brown sugar, egg, and vanilla to the mashed bananas and mix well.
Add dry ingredients and mix to form a pancake-like batter.
Fold in walnuts.
For mini donuts with an electric donut maker, follow instructions from your device manufacturer’s cooking instructions to cook donuts in your electric donut (or waffle) maker in batches. Be sure to spray or grease with butter between batches.
For classic banana bread, add to a greased baking loaf dish and bake at 350° for 45 minutes to one hour. The banana bread should be golden brown. You can insert a butter knife or toothpick to ensure it is fully baked in the center. The toothpick or butter knife should come out clean.

Gadgets: We used an electric mini donut maker, but a mini waffle maker would also work! Be sure to refer to the manufacturer’s cooking instructions for your device.
Optional add-ins: walnuts, pecans, chocolate chips, white chocolate chips
Bananas: Reduce food waste! Overripe bananas work best. This is a perfect recipe for using up bananas that have browned.
