Pepper sauce

If you enjoy a little spicy kick, you will love pepper sauce because it enhances the flavor profile of any savory dish- breakfast, lunch, dinner, or snack. I love it because it is made from fresh, healthy, and natural ingredients! We also enjoy making large batches and gifting jars of it to family and friends.

INGREDIENTS
Makes about 4 cups of pepper sauce | Total time: 10 mins
20-25 scotch bonnet peppers/Jamaican peppers
1 cup roughly chopped shado beni OR cilantro
1- 1.5 cup fresh mango
8 springs scallion/green onions
6 cloves garlic
3 pimento/ seasoning peppers (optional)
1/2 lemon, squeezed
1 tablespoon sea salt
1 teaspoon cracked black pepper
3 tablespoons dijon mustard
1 cup White Vinegar
INSTRUCTIONS
Wash and roughly chop all ingredients.
Using a blender or food processor, blend all ingredients on high speed until smooth.
Store in an airtight glass container in the refrigerator.

Notes on Ingredients and Substitutions
Like most of our recipes, think of this recipe as a guide. We make pepper sauce all of the time, and we always adjust the ingredients and quantities. You can make pepper sauce all year. However, in our region, we find that the most flavorful batches are made during the warmer months when everything is in season. Many people like to add fresh thyme and ginger, so feel free to experiment!
Shado beni: Shado beni is a distant, but more intense, cousin of cilantro. Some people know it as chadon beni or recao. If you can’t find it in your area, fresh cilantro works just fine.
Pimento Peppers/Seasoning Peppers: We live in New York City, so we usually find these at Caribbean markets or Korean veggie stands when we aren’t growing them during the summertime.
Scotch Bonnet Peppers/Jamaican Peppers: Feel free to add more for extra heat!
Storage: Store in the refrigerator in a sanitized air-tight glass container. The flavor will enhance as time passes, so we advise that you allow it to sit in the fridge for a few days before usage. The color may darken as time passes.
